Spaghetti And Turkey Vegetable Sauce

Is anyone getting sick of my turkey dishes? Somehow I'm not. Turkey is so fun to experiment with. It all started with a little extra virgin olive oil, garlic, onions, and fresh basil.
Garlic, Onions, and fresh Basil
That will get your kitchen smelling real good.

Looking at this picture just reminds me of that yummy smell.
Adding the ground turkey
Add a little ground turkey, some spices, and a can of tomatoes.
Adding the tomatoes
I probably should have cut these a bit more before putting the can in, but it wasn't too much trouble crushing them down with my wooden spoon.

But, it's not over yet, time for the mushrooms and eggplant!
Mushrooms and Eggplant
My pot was a bit small, but I somehow crammed all the veggies in.
Adding the veggies
Once they settled in, the veggies started to shrink down anyway.

Can you tell I love mushrooms?

I probably could have eaten the sauce on it's own.

Empty little bowls awaiting their meal.
Awaiting a meal
First, a little whole wheat pasta.
And I bet you can guess how we topped it off?

More turkey dishes to come soon!

Hi there,
I found your blog by googling for craft blogs.
I skimmed through some of your posts and noticed we have some things in common.
1. our husbands have the same first name (spelled differently)
2. you and yours have birthdays 4 days apart. Mine and I have birthdays 5 days apart.
3. You went to library school. So did I. :)
4. You like baking. So do I. :)

Anyway, just thought I'd say hi!
