Mexican Crock Pot Casserole

Sundays have become crock pot days in the Annette household. While my Internet was down two weeks ago, I experimented with things around the house, and made an enchilada/burrito-like casserole in my crock pot. Enchilada sauce, tortillas, cheese, refried beans, chilies, chicken, sour cream, and green onions.

I let it simmer for about 7 hours.

It turned into quite a sloppy mess.

The tortillas disappeared, so I had to heat up some fresh ones. The casserole turned into a whole other beast, best eaten like a burrito. Although it looks messy, it was really good. So far, this crock pot has never let me down.

I am honestly intimidated by my crockpot. When I look in my recipe book, the recipes always seem too fussy, and I'm never sure what to do with it on my own. Besides the Mexican casserole dish, what easy delicious recipe would you recommend?

I totally recommend Beer Chicken Fajitas, I got the recipe from http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_36001,00.html, but I changed it from beef to chicken. That's been my favorite recipe so far.
I have never looked at a crock pot cookbook ever, I usually just experiment. It's so magical to me - you throw a bunch of stuff into a pot, and hours later it's a complete dinner! Once you start, it's hard to stop (at least for me)! You should blog your first crock pot dish!
